My Kitchen Must Haves + GIVEAWAY

The kitchen is my oasis. My sister always makes fun of how many gadgets I have and how much food is in my pantry, but I cook nearly every meal. We don't eat out much and I really do enjoy cooking, so it's essential to keep my kitchen filled with what I need, as well as what keeps me on track, health wise. What are my favorite things to keep on hand? Here they are!


Kitchen Aid Spiralizer - Curly fries and zoodles are recurring favorites around here. I'm fairly certain meals were boring before this nifty gadget. 

Ninja Coffee Bar - This isn't for any reason of health, but my coffee keeps me sane. I stay up late for some quiet time and wake up early with my babies. I need coffee! This coffee maker can make individual cups, travel size mugs, or a whole pot. 


Califia Farms Unsweetened Vanilla Almond Milk - I get a lot of questions about what I put in my coffee and this is it. It's slightly sweet and makes my coffee creamy like I like. From a hard core creamer addict, I vouch that this is actually delicious! 

RX Bars - I just recently discovered these and I wish I had before. They come in great flavors and I love that they have a good amount of protein in them. My favorite is the Chocolate Sea Salt. 

Primal Kitchen Ranch - This dressing is dairy, gluten and soy free, with no funky additives. And it's good! I love their mayo as well. 

Lara Bars - These are great on the go and a lot of the varieties are simply fruit and nuts. Way better for you than a regular processed granola bar! My favorite is the Lemon Bar flavor. 

Applegate Turkey Bacon - while this isn't completely Whole30 compliant, this is my favorite and the one I stick to outside of official Whole30. It's only offense is less than 2% maple sugar. 

Trader Joe's Unsalted Almond Butter - I eat this as a snack with apple slices, on a banana or with celery. The TJ's brand has no added sugar, is the cheapest I've found and is the best tasting, in my opinion. 

Seltzer - I don't discriminate when it comes to seltzer, but Polar's Blueberry Lemonade and LaCroix's Pineapple Strawberry are hard to beat. 

Ghee - I use this in place of butter and get it at Trader Joes as well. Again, the best price for it that I've found. Ghee is free of lactose and casein, making it easier to digest for some people than butter. 

Applegate Chicken and Apple Sausage - This is a favorite on the go. I love to roast a bunch of veggies on a cookie sheet, then in the last 15 minutes or so, I'll throw these sausages on top. It makes a simple, yet yummy dinner. 

Wholly Guacamole - This is a great dip for veggies as well as a nice option instead of salad dressing. I eat a ton of avocados, but when I'm out, or in a hurry, this is a go-to.

Made You Blush

One of my absolute favorite color trends right now is blush. I really think it's because it reminds me of spring and I always find myself craving that season around this time of year. My wish lists are all full of this pretty in pink you can see! 


4 Ways To Wear a Chambray Shirt

When my mom and I were cleaning out my closet, there were several times when one of us said "what would you wear with this?" The other almost always answered "a chambray shirt!" It's probably the most versatile piece in my closet and can create a ton of different looks. 

Here are 4 of my favorite ways to wear chambray!

1. Athleisure

Chambray is a great fit for a cute athleisure look. Add leggings or skinny jeans and a pair of cute sneakers

2. As a Layer 

If your answer for what goes under this is "a white tee shirt", chambray will probably work. I love layering underneath a leather jacket or a colorful sweater or scarf. It works great with a bold pant that you may not know what to pair with. 

3. With a Skirt

Fancy or casual, chambray works great either way. I love how it looks with that fancy midi skirt as well as my DIY maxi skirt

4. Around the Waist

I got really good at this after my 3rd son was born. It really covers all the wrong places on my belly and adds a fun dimension to a striped dress or basic jeans and tee outfit. Also covers a bit if your dress is a bit light! 

My favorite chambray shirt has a bit of shape to it, not too baggy and is a bit on the lighter side. I like when it's lighter in color so I can do a denim on denim combo and have some contrast. It also works better for spring and I find myself wearing chambray a lot then. I really love this one from J. Jill. (seen in the top left photo) since it fits all my requirements!

Distressed Denim + Stilettos

Happy Friday! At some point this week, I decided to mix it up and throw on some stilettos. I bought these 12 years ago for my first interview after nursing school and have pulled them out many, many time for events. A black pump, whether you want a sky high one or not, is a great wardrobe staple. These are a great classic silhouette and these are a bit more modern of a cut. Mine are Nine West and I remember feeling like they were expensive at the time, but they've lasted and have turned out to be a great investment.

I thought this mixed material tee was fun and grabbed it for a good transition piece for spring. It feels like a t-shirt on the top, but has the back zipper and loose, side split bottom to make it a little more fun. It also comes in 3 colors and is under $20!

Littles Style: Style of Their Own

There's not much cooler for this fashion loving Mom, than to see my kids develop a style of their own. Cooper is 8.5 (say whaaat?!) now and has really decided on a style that he loves. I'm not quite sure if it's rocker, comfortable or a combo of the two, but it's totally Coop.

When I first asked him if he wanted to be in this post, he really wanted to write the whole thing. He wanted to tell you about the new diet he's doing, called "Glory30, the diet of glory". I'm pretty sure it's in utter protest to our current Whole30, but I think I might rather be on his. It includes chocolate and no veggies. Haha. We had some changes in plans that have me at the hospital with the little guy (RSV and croup!) so Coop wasn't able to write it out in time. But he'll be back I'm sure, because he loves to tell his friends he's "on the internet". I love that kid!

Winter Whites and Pastels

Last Sunday was this mega, North Carolina white out. I wish there were more days of snow, because it made everything look so beautiful! At least I got to wear this winter pastel outfit I was going to wear out to my friend's Birthday in Asheville, even if we didn't make it out of the driveway! I think it would be a perfect cozy Valentines Day look.

Loaded Potato Soup: Favorite Whole30 Recipe

There's nothing better in the chilly winter, than a bowl of creamy soup. Problem with Whole30, is that no dairy is allowed, thus eliminating the creamy factor...or so I thought until I made this soup!

My husband is a pretty picky eater and wasn't too pleased when he saw soup on the menu. He wasn't convinced that a dairy free version of one of his favorites would fill him, or be the tasty dinner he was hoping for. But after the meal was done, he was nothing but compliments and I was really proud of the outcome. It's creamy, flavorful and surprisingly simple.

Now, I will say that if you make this, it might not be as dark as mine is. I got a little distracted while sauteing the bacon and onions and they got a bit dark. Which is fine with me. But if you don't like a little bit of char, pay more attention to the soup and less to the Real Housewives. 

I digress....

Moving on to how to get this goodness on your table.
Whole30, dairy free loaded potato soup

1 purple onion, diced
8 slices bacon
1/2 Tbsp ghee
1 container chicken broth (32 oz)
1 can coconut milk (full fat, I get mine at Trader Joes)
8 medium potatoes, diced
1 tsp garlic powder
salt and pepper to taste
green onion for garnishing

In a large stockpot, sautee diced onion and 4 slices of bacon, chopped up, in ghee until onion is translucent and bacon is crispy. Add chicken broth, coconut milk, potatoes, garlic powder, salt and pepper. Cover and simmer on low, 30-45 minutes, or until potatoes are soft. While the soup is cooking, cook remaining 4 slices of bacon to use as a garnish.

Once the soup is cooked, use an immersion blender for about 5 seconds to blend some of the potatoes up. Just stay on one section so you don't blend too many of the potatoes! You could also put a couple cups of the soup into the blender, puree and then put back in the pot. 

Serve, garnished with bacon and green onion. 
Cold weather Whole30 meal So there you have it. This is an easy dinner to throw on your winter menu, no matter what your dietary plan is!
