Surf's Up {A Little Fashion}

A Sponge Bob sno cone maker that was a $5 gag gift from the after Christmas clearance rack provided us quite a bit of entertainment last week. You would have thought the sugar covered ice was pure gold! In reality, it was a little treat in exchange for cute smiles. Yes, I occasionally bribe my kids.

This is my absolute favorite FabKids outfit. Cooper was so excited when he saw this one and just had to have it. I secretly love when he picks the same outfit that I would have! I can't wait to take Mr. Personality back to school shopping. His taste in clothes is so fun to see!

Weekend Wear Out

Last Thursday, I spent about 14 hours straight cleaning my house and going through those last few pesky boxes that had yet to be unpacked. At midnight, I painted my nails and fell into bed, wondering what kind of crazy person agrees to 16 people in their house for the weekend. But when the doorbell rang Friday morning, I was oh so glad I did! 

A few of the families from our old neighborhood in Virginia made the trip down to North Carolina to see us. We really made some awesome friends there and as sad as it was to move away from them, it makes me so happy that we are continuing our friendship. 

Friday morning, a handful of the people got their early and we headed to the lake. (But first...let me take a selfie.)
We spent a few hours trying to flip people off our quickly deflating tube and floating around the lake. 
Oh and beer drinking. 
By afternoon, the whole crew had arrived, we ate great North Carolina style BBQ for dinner and I was glad I had decided not to cook. It was delish! Apparently, I was more tired than I realized, because when I went to take Cooper to bed, I blinked too long and didn't come out till the morning. Whoops. 

Saturday, the whole gang loaded up for a full day on the water. 

Callan did his typical boat nap on a bed of beach towels. 
And when everyone else went to a little restaurant to grab some food, I got a little down time with him. 
We stayed out until the sun went down, ending the night with music, dancing and grilling dinner at 10pm. The hubs and I spent Sunday napping, between loads of sheets and towels. It was an amazing weekend! 

All the guest loved these baskets I made up for each room. I love feeling really comfortable when I go places and I think having a few necessities in your room when you travel is really nice!
I had to show you these downright bad for you dessert that I made when they were all here. Cookie dough, smushed between pretzels, dipped in chocolate and chilled. I would have a better picture except, as you can imagine, they didn't last long at all!


Spinach, Feta and Roasted Red Pepper Pizza {Recipe}

There's not much better to me than pizza. Also, not much more guilt laden. I love this lighter version of a favorite and it definitely doesn't lack flavor.

My father-in-law would probably tell you that this recipe is a complete waste of a perfectly good pizza crust. I think if I could get him to taste it, dreaded spinach and all, that he just may sing a different tune.

1 Pizza crust
2 Tbsp olive oil
1 whole roasted red pepper, sliced
2 cups spinach, torn
1 chicken breast, fully cooked and thinly sliced (leftover grilled chicken is perfect!)
2 cups mozzarella cheese
1/2 cup feta cheese, crumbled
Garlic salt (optional)
Parmesan cheese (optional)

Roll your dough out onto a hot stone, or pan of your choice. Spread olive oil all over crust and add toppings. I sprinkle a little garlic salt and sometimes parmesan cheese around the edges of the crust before baking to add some flavor! 

Bake according to crust directions. Typically 425-450 degrees for 12-15 minutes or until browned and cooked through.

There are so many crust options, including whole wheat ones out there. I make my own dough out of unbleached flour and use it for everything from pizza crust to cinnamon rolls. I'll share the recipe soon!


Country On {Fashion}

Maybe it's from our move to North Carolina, or my recent visit to Georgia, but I'm feeling the southern style lately. I'm totally getting back into living in the south and I can feel my southern drawl coming out more. Yes, I'm drinking out of a mason jar and wearing cowboy boots with shorts. Why wouldn't I?

These Justin boots from Country Outfitter are my first legit "cowgirl boots" and they're perfect for a bunch of occasions. I have plans to wear these to a country concert later this summer. I also think this look is fun for a backyard barbecue, or a ball game. 

Here's how I wear my boots: Denim cutoffs are a no brainer. They're the classic piece to wear with boots. Wear them with a tank and you've got a casual look like I'm wearing. Add a loose fitting embroidered top and you've got a dressier outfit. 

Boots would look great with a chambray shirt and a pair of crochet shorts or a even a cute summery romper. 
Overall, I just like the southern feel of these boots. And if I haven't had time to keep my summer pedi looking so summer-y, wearing boots is a perfect option!

Nordstrom Gimmes for You and the Kids!

Picnics and Playgrounds

In our old neighborhood, the people 2 doors down from us had a cool swing set. Every time we went outside, my boys would bolt towards their yard, and I couldn't blame them. I wanted to play, too. I lusted after that swing set and often mentioned to the hubs that we needed one. Luckily, he didn't listen much, because we moved very soon after that and would have had to leave it behind. 

After moving to Charlotte, we were all thrilled with Santa's delivery of a new swing set. 5 months later, we finally got HOA approval and started building the very next day. 6 days and approximately 30 hours of work later, we have a swing set in our backyard!

It's cool. And I feel pretty rock star for building it ourselves. (Outside of the utter fear it would fall apart when we first climbed up.) I'm so glad we have this, just in time for summer. My boys are begging to go play when they wake up every morning and I'm loving sitting and watching them.

One of my favorite features of the swing set is the picnic table underneath the "house." It's all shaded and perfect for picnics.

I've always been a big picnic person. My kids destroy a good tray of food and they will often eat things they usually don't. (Food on toothpicks will do that to ya.) I've been making up trays of fruits, vegetables, cheese, crackers, turkey pepperoni and a Capri Sun juice drink to deliver to their table. I'm only shocked if anything is left when they're done.

I'm not sure why it is, but getting these boys to eat vegetables at dinnertime may as well be a dental appointment, but for a picnic? Celery and carrots are where it's at.

My boys' drink of choice would always be Capri Sun and I love that Capri Sun makes 100% juice drinks* that are all natural and have a full serving of fruit. I can be the cool mom, putting that fun silver pouch out for my kids. What's more, is that none of the Capri Sun juice drink products have artificial preservatives, colors or flavors and now come with a clear bottom. There are two little guys that will be spending lots of time this summer tucked in their table with a picnic tray. All the sweat and hours of work were totally worth it for their excitement to have their very own playground!

My sweet brother, Josh, was nice enough to take pics for me everyday when I was in Georgia. 4 sisters is going to make that kid an awesome husband someday! I had just gotten this top from Front Row Shop and just love the way it fits. Knew I wanted to wear it there!

How pretty is all that moss?! I just love the south. Except for the humidity. And bugs. And lack of winter. Maybe I just like moss, grits and saying y'all.

Birthday Weekend

Saturday was the hubs birthday and his only request was to spend it on the lake. Easy enough for me! We went out early that morning and all had a blast. 

Um, yes. That's me out there with Cooper. He kept giving the hubs the thumbs up to go faster and I just screamed for the majority of the time. 
The boys had enough after a few hours and curled up with me  on the way back in. The rare moments they let me hold them close are the best!
Birthday dinner request was "some kind of fish at home". I made chilean sea bass and scallops that I picked up fresh from our farmers market. It was amazing!
After dinner, we decided to head back out on the lake. I can't tell you how many times Cooper jumped off the back of the boat!
It's so gorgeous to be out when the sun sets! 

Sunday, we went to church, then we were off to a party! Our friends have, arguably, the best backyard on the lake and won a contest through the local radio station for a backyard barbecue and concert. We spent the whole afternoon there while the kids swam, DJ played tons of music and we sweated buckets!

Katy Tiz (The Big Bang) preformed a couple songs and took pictures with everyone.

Needless to say, we all slept very well last night. Who knows how long we'll live here, so we're trying to take advantage of every bit of time we have living by the lake!
