Summer Pasta Salad {Recipe}

This is one of my absolute favorite dishes to make in the summer. My Aunt gave the recipe to my Mom and she passed it on to me. It's a perfect side dish, but hearty enough that it could be a meal. It has no egg or mayonnaise, so it can sit out at a barbecue for a while without going bad. It also is full of veggies and all in all? Not that bad for you. 

You can make the entire dish, only dirtying up 1 pot and a mason jar, if you time it out right. I blanch the veggies and boil the pasta all together. My fettuccine takes the longest at 10 minutes. The tortellini takes 5 and the veggies, 2. I put the fettuccine it in to boil, setting my timer for 5 minutes, then add the tortellini. Set it again for 3 minutes, then add the veggies for the last 2 minutes. When that timer goes off, everything is cooked and ready to drain!

The dressing is easy and is all shaken together. I normally use a mason jar, but couldn't find an empty one this time and just used a tupperware container.

Then it's as easy as tossing everything together and chilling!

I think it's best if it sits in the fridge overnight or at least for several hours. If you don't have time for that, at least get it chilled. It's meant to be served cold.

2 cups Snow Peas
2 cups Broccoli
2 1/2 cups Cherry Tomatoes, halved
2 cups Mushrooms, sliced (We hate mushrooms so I don't put them in! You just add them raw, though)
1 can whole Black Olives, drained
1 package Tortellini (I have used both frozen and dried. Either is fine)
3 oz Spinach Fettuccine 


1/2 cup Sliced Green Onion
1/3 cup Red Wine Vinegar
1/3 cup Veggie Oil
1/3 cup Olive Oil
2 Tbsp Parsley
2 cloves Garlic, minced
2 Tbsp Basil
1 Tbsp Dill Weed
1 tsp Salt
1/2 tsp Pepper
1/2 tsp Oregano
1 1/2 tsp Dijon Mustard

Shake dressing ingredients vigorously in a sealed container until well combined.

Cook pasta according to package directions. Blanch snow peas and broccoli for 2 minutes. Toss together with remaining ingredients and dressing. 

Serve chilled.

I shopped alone. ALL ALONE. ALL DAY. It was super exciting. Except for I had to carry all my bags. Who would've thought I'd miss the stroller? Those skinnies are another Target steal at $7 from the girls department. The blue crops from the first pic are girls department, too. Perfect for us shorties and they have adjustable waist. Win.

Carnival Cruising: I need your tips and tricks!

In about 2.5 weeks, I'm loading up my boys for a week on the ocean! We are going on our second "just us" family vacation ever and I couldn't be more excited! 

Neither the hubs or I have ever been on a cruise, so we're pretty clueless going into this thing. We're sailing to the Eastern Caribbean with stops in Grand Turk, Half Moon Cay and Freeport, Bahamas.

We already have a game plan that includes after bedtime wine drinking on the balcony and taking turns having some solo time to relax. Cooper is pretty sure we are going to see Captain Hook and pirates. We haven't booked any excursions yet, but I'm hoping y'all will give me tons of advice so I'm all sorts of prepared! 

I'm just really excited to disconnect for awhile and spend quality time with my boys. I love the idea of this cruise so much. Being in the middle of the ocean with very limited connection to the world, outside my family. It's just not that easy to completely separate from work, the computer, social media and all that jazz. The warm sun, a huge ship and tropical islands should do just the trick! 

Taking the kids is what I feel like I need to be the most prepared for. Do I need to bring them snacks that I know they'll eat? How am I going to entertain them without internet access? (I mean, Mickey gets us through every restaurant meal.) Are we going to need Dramamine? 

For those of you who have cruised, what should or shouldn't I bring? Any tips for things to do on our stops? What are your best cruising tips?

I got this gorgeous dress from Lendperk, a dress rental company. You can just think of them as the Netflix of dresses. I got this dress just in time for a fancy work event I had to go to with the hubs. It was also just in time for the stomach bug plague to hit here, so instead of going, I was home with the sickies. I was really bummed to not get to wear this dress there, but it didn't stop me from dressing up on a random afternoon. You know you'd do it too. 

Lendperk has 3 different levels of dress rentals:

1 dress - $20/month
2 dresses - $34/month
Unlimited dresses - $49/month 

You wear the dress and ship it back in the prepaid envelope. No cleaning or ironing, just ship it back. If you have a multiple dress package, you can then order your next one. I think it's perfect for wedding season or the holidays with lots of parties! I have so many fancy dresses that I've worn once or twice and they're just in the back of my closet. A really nice thing about Lendperk, is that there is no commitment. You can cancel at anytime, without penalty. Need a dress in July but not August? Cancel and restart your plan. Or, rollover your dress to the next month. They are really easy to work with!

Clean Eating: Chocolate Peanut Butter Fudge

I'm doing pretty good on the clean eating train. My biggest downfall is, and has always been, my massive sweet tooth. I decided that I needed to crack down and come up with some clean options that satisfy that without binging on sugar. Since I've eaten nearly the entire container (guilt free, I might add) I think this is a success. 

All the ingredients are just blended together. It's kind of hard to blend it, as it is thick. I had to scrape the sides a few times, but it got pretty smooth.

When it's all blended, you'll have a thick blog like this.

Press it into a pan lined with wax or parchment paper and chill. If you like the pieces thick like they are pictured above, use a small pan. I actually used a pyrex storage container that is about 6x4.

Chill for at least an hour and slice into squares. Store in an airtight container in the refrigerator with parchment in-between, if you stack them.

You WILL NOT be sorry you made these. I've grabbed a couple after a workout, as a mid morning snack and after dinner treat. I may have had a couple with my breakfast yesterday. They really are good for you, so you don't have to feel guilty! 


1 cup Oats
1 cup smooth Peanut Butter (I use natural pb without any sugar added)
1 Tbsp Cocoa Powder
2 Tbsp Coconut Oil
3 Tbsp Milk (you could use almond, rice or whatever kind you drink)
1 tsp Vanilla Extract
1/3 cup Honey

Blend, press, chill and serve! Enjoy!

The dress is from Ross. I love shopping at Ross and TJMaxx for fun pieces on the cheap. I've picked up several summer dresses for under $20. It's all hit and miss, but don't be afraid to dig a little! Sometimes, it's like hitting the jackpot there!

I am loving these Majorca wedges for the summer, too. Comfortable enough for everyday and just enough to dress up an outfit. And speaking of everyday, how about the PINK purse?! Technically more of a coral, but my am I all about it. I just want to wear black and white and carry it all of the days.

Waving the white flag.

I'm just shaking my head at the events I've had the sheer joy of experiencing this week. Last Monday started out with screams and vomit in the crib at 5am. After a couple days, lots of snuggles and sweatpant wearing, the littlest one was almost back to normal. Just in time for me to get sick.
Well, when Mom is sick, you don't really get taken care of and you still have your job to do.  (Like you all well know) I had a couple days where I would feel better in the morning, then feel awful by the end of the day. I think the lack of sleep from the sick little didn't help either. When Saturday night rolled around, I had started to feel pretty miserable again, when the hubs told me he didn't feel good...

We all know sick husbands are worse than sick kids any day.

Back to nurse mode for me, Sunday sent me to the store for all of this.
Y'all. People's faces when you are walking through the store with these goods? Priceless. Like you have the plague. I mean, we kinda do

So this morning at 4am, when I felt a very hot little body get in bed with me, I wasn't surprised at all. The puke was soon to follow and just like that, whole family down. I mean, the stomach bug loves us. 

I've sprayed everything in Lysol. Wiped everything in Clorox wipes. Tried to keep everyone apart, but lets face it, that's near impossible. I turned my head for a second this morning and Callan is standing in Cooper's puke bucket. Only that child.

I'm pretty sure I've never been this tired. I guess my body didn't really get a chance to recover between taking care of everyone. I haven't eaten because I'm terrified that I will catch it again. If I don't eat, there's nothing to come up, right? 

I have all this sudden jealousy for the high schoolers who get sick, get taken care of by their Mommy and sleep for 3 days straight. Oh, precious, uninterrupted sleep. 

All that, and after 3 attempts at number picking, help from a stranger and tons of confusion, I didn't even win the mega millions. That may have made this 7 days and counting adventure a little brighter.
