Clean Eating: Florentine Pinwheel Steaks

I made this dish over the weekend and immediately put it into rotation. We've been eating so bad lately with all the travel and moving, so it was nice to get a couple home cooked meals in. This meal is one from my eMeals clean eating menu, which I love. Can't tell you how much easier it makes my life, especially right now with all the chaos happening around here!

Here is the original recipe from Emeals: 

11⁄2 lb flank steak
1⁄2 cup crumbled feta cheese
10 oz bag baby spinach
1⁄4 cup chopped fresh basil
7 oz jar roasted red peppers, drained
2 tablespoons olive oil
1⁄2 teaspoon salt, 1⁄2 teaspoon pepper 


Soak 6-inch wooden skewers in water for 30 minutes. Preheat grill to medium-high heat. Pound flank steak to 1⁄2-inch thickness. Layer cheese, spinach, basil, and peppers on flank steak; roll up tightly from widest side. Secure steak with wooden skewers at 1-inch intervals; brush steak with oil, and sprinkle with salt and pepper. Grill, covered with grill lid, 12 to 15 minutes or to desired degree of doneness. Let rest 10 minutes; remove wooden picks and slice.

I ended up using top round cutlets in place of the flank steak and making individual roll ups. I didn't want to pound meat in the kitchen because of all the house showings we've been having. They worked out great and cooked very quickly. You just have to weasel the skewer in and out a bit more to hold them closed. I also skipped the salt on the outside because I went a little heavier on the feta. I love me some melty cheese.
