Holiday Cooking: Sugared Cranberries
With just 1 week to go until Christmas, I must share with you my absolute favorite festive food. I started making these cranberries last year and have made them countless times since then. Now, you can only buy fresh cranberries right now, so go get them before they're gone!
All you do is put 2 cups of cranberries in a bowl with 1 cup of maple syrup and refrigerate overnight. The next day, drain all the syrup, toss the cranberries in sugar until they're coated and lay on a cookie sheet to dry.
This is the gorgeousness you'll end up with. Mmmmmh.
The most important thing you can make with these, are Cranberrie Brie Bites from Yummy Mummy Kitchen. I make them for every party at the holidays, because people love (like really love) them.
Put a slice of brie cheese on a cracker of your choice.
Add a little cranberry chutney or jelly.
Then top with a few sugared cranberries. Done.
If you're taking them to a party, save a few for yourself. You'll thank me.
So if you happened to make a double batch of the cranberries for snacking right out of the container, you'll want to make a salad with them. Spinach, pecans, feta and a handful of the sugared cranberries will make a gorgeous and quite delicious salad, sure to impress.
